Set a wok over high heat and add the olive and sesame oils.
Add the garlic and prawns, then toss continuously until the prawns are just cooked.
Pour in the honey and soy sauce, add the crushed chilies, and cook for another 2 to 3 minutes until the glaze tightens.
Transfer to a warm skillet or plate and finish with spring onions.
Plating direction
Arrange the honey-glazed prawns in a neat circular pattern in the center of a dark, matte-finished plate. Drizzle any remaining glaze around the prawns and finish with a delicate sprinkle of micro-coriander and finely sliced red chili for a touch of color and freshness.
