West African Beef, Plantain & Okra Stew

INGREDIENTS

METHOD

  • 200g beef stew meat, cut into cubes

  • 2 tablespoons olive oil, divided

  • 1 teaspoon kosher salt, 

  • 1 teaspoon freshly ground black pepper

  • 1 large onion, chopped

  • 6 garlic cloves, sliced

  • 1 tablespoon mustard seeds, divided

  • 1 teaspoons coriander seeds

  • 1 teaspoons ground cumin

  • 2 cups cubed peeled sweet potato 

  • 3 cups unsalted beef stock

  • 1 can plum tomatoes, drained

  • 2 cups sliced okra 

  • 1 large green plantain, peeled and cubed

  • 1/4 cup chopped fresh cilantro

  1. Heat a deep large pan over high heat. Add oil, swirl to coat.

  2. Sprinkle beef with salt, pepper and secret spice. Add beef to pan, cook for about 4 minutes, browning on all sides.

  3. Remove from pan. 

  4. Reduce heat to medium. Add onions and garlic. Cook for 3 minutes or until soft, scraping pan to loosen browned bits.

  5. Add mustard seeds, coriander, and cumin, cook for 1 minute.

  6. Stir in beef, sweet potato, stock, and tomatoes, stir to break up tomatoes.

  7. Cover and bring to a boil. Reduce heat to low and simmer for 20 minutes.

  8. Stir in okra and plantain, simmer an additional 20 minutes. Stir in fresh cilantro.
