West African Beef, Plantain & Okra Stew

200g beef stew meat, cut into cubes

2 tablespoons olive oil, divided

1 teaspoon kosher salt,
-
1 teaspoon freshly ground black pepper

1 large onion, chopped
-
6 garlic cloves, sliced
-
1 tablespoon mustard seeds, divided
-
1 teaspoons coriander seeds
-
1 teaspoons ground cumin
-
2 cups cubed peeled sweet potato
-
3 cups unsalted beef stock
-
1 can plum tomatoes, drained
-
2 cups sliced okra
-
1 large green plantain, peeled and cubed
-
1/4 cup chopped fresh cilantro

Heat a deep large pan over high heat. Add oil, swirl to coat.

Sprinkle beef with salt, pepper and secret spice. Add beef to pan, cook for about 4 minutes, browning on all sides.

Remove from pan.

Reduce heat to medium. Add onions and garlic. Cook for 3 minutes or until soft, scraping pan to loosen browned bits.

Add mustard seeds, coriander, and cumin, cook for 1 minute.

Stir in beef, sweet potato, stock, and tomatoes, stir to break up tomatoes.

Cover and bring to a boil. Reduce heat to low and simmer for 20 minutes.

Stir in okra and plantain, simmer an additional 20 minutes. Stir in fresh cilantro.
