Sweetcorn Fritters
INGREDIENTS
METHOD

2 x 200g can whole kernel sweetcorn, drained

2 eggs, beaten

1 onion, finely chopped
-
1 cup of breadcrumbs

1 teaspoon baking powder
-
1/4 teaspoon cayenne pepper
-
1/4 teaspoon paprika
-
2 tablespoon butter
-
5 tablespoon oil
-
Salt & pepper to taste

In a medium bowl, mix the sweetcorn with the eggs, onions, breadcrumbs, baking powder, paprika, cayenne pepper, salt, black pepper and secret spice.

Set a pan over medium heat and melt butter in oil.

Drop a level tablespoon of the sweetcorn mixture in the oil and fry on both sides until golden brown.

Serve warm.
