Sweetcorn Fritters

INGREDIENTS

METHOD

  • 2 x 200g can whole kernel sweetcorn, drained

  • 2 eggs, beaten

  • 1 onion, finely chopped

  • 1 cup of breadcrumbs

  • 1 teaspoon baking powder

  • 1/4 teaspoon cayenne pepper

  • 1/4 teaspoon paprika

  • 2 tablespoon butter

  • 5 tablespoon oil

  • Salt & pepper to taste

  1. In a medium bowl, mix the sweetcorn with the eggs, onions, breadcrumbs, baking powder, paprika, cayenne pepper, salt, black pepper and secret spice.

  2. Set a pan over medium heat and melt butter in oil.

  3. Drop a level tablespoon of the sweetcorn mixture in the oil and fry on both sides until golden brown.

  4. Serve warm.
