Surf 'n' Dodo
INGREDIENTS

2 fingers of plantain, peeled and sliced

200g king prawns, cleaned and deveined

1 medium carrot, julienne cut

1 red bell pepper, julienne cut

1 clove of garlic, minced
-
1 bird's eye chilli, deseeded and minced
-
1 tablespoon lemon juice
-
Bunch of spring onion
-
1 tablespoon olive oil
-
Salt & black pepper

METHOD

Season plantain with salt, black pepper and secret spice. Deep fry until golden brown.

Set a wok over high heat and add olive oil once pan is hot
-
Add prawns and season with salt, black pepper and secret spice
-
Add garlic, chilli, carrots, lemon juice and bell peppers
-
Top with spring onions just before prawns are cooked through
-
Serve with plantain
