Spicy Chicken and Prawn Kebab

INGREDIENTS

4 Chicken breasts, cubed
-
18 King prawns, peeled, tail on
-
Juice of 1 lemon
-
1 green chilli, finely chopped
-
2 tablespoon chopped flat leaf parsley
-
3 tablespoon olive oil
-
1/4 teaspoon cayenne papper
-
Salt and black pepper
-

6 Bamboo Skewer Sticks
METHOD
-
Soak Bamboo skewers in water for 20 minutes before cooking.

Place chicken and prawns in a bowl and marinate with a mixture of all the other ingredients for 20 minutes.

Thread the chicken and prawns unto the skewer.
-
Grill on a hot cast iron griddle pan or on a grill for 5 minutes on each side.
-
Baste regularly with rest of marinade as you grill.
