Soy Chicken Rice Bowl

INGREDIENTS

  • 1 Ripe Avocado

  • Cherry Tomatoes

  • 1/2 cup Long Grain Rice

  • Lettuce

  • 1/3 Cup Light Soy Sauce

  • 1/3 Cup Lemon Juice

  • 1 tablespoon Light Brown Sugar

  • 1 teaspoon Sesame Oil

  • 2 teaspoons grated Ginger

  • Salt

  • Black Pepper

METHOD

  1. Combine soy sauce, brown sugar, lemon juice, sesame oil, ginger and black pepper.

  2. Put Chicken breasts in a ziplock bag and pour soy marinade over it.

  3. Leave to marinate for 1 hour and sear/grill till cooked.

  4. set aside to rest.

  5. Boil rice in salted water and set aside.

  6. Cut avocados into strips, cherry tomatoes in halves, and chicken breasts in strips as well. 

  7. Assemble rice bowl and serve.
