Somali Biscuits Padana

INGREDIENTS

  • 185g unsalted butter

  • 180g caster sugar

  • 220g flour

  • 2 eggs

  • 1/4 cup milk

  • a pinch of salt

  • 60g almonds (Blanched)

  • 60g toasted pine nuts

  • 60g pistachio nuts

METHOD

  1. Sift together the flour and salt, stir in the caster sugar.

  2. On low-medium speed using a paddle attachment, mix in the butter until well combined.

  3. Beat the eggs and add in with the milk, mix until you have a smooth dough.

  4. Fold in the nuts till evenly distributed. 

  5. Pour into a greased 20-cm diameter cake pan and bake for 40 minutes at 180℃.

  6. Slice and serve warm or cold with ice cream/whipped cream.
