Simple Avocado & Prawn Salad

INGREDIENTS

METHOD

  • 2 Avocados, depipped and sliced

  • 6 large lettuce leaves

  • 300g cooked prawns, shelled

  • 50g cashew nuts

  • chopped parsley

  • Salt and Pepper to taste

Dressing​​

  • 1 cup mayonnaise

  • 3 tablespoon lemon juice

  • 1 tablespoon tomato sauce

  • 1/4 tsp cayenne pepper

  1. Season the avocados with salt and pepper.

  2. Place lettuce leaves on one side of the plate, followed by prawns, then avocados.

  3. Combine dressing ingredients and pour over prawns.

  4. Garnish with parsley and serve.
