Seared Cod with Mushrooms & Olives
INGREDIENTS

4 Cod Fillets

1 Onion, chopped

1 red pepper, chopped
-
4 tomatoes, peeled & pureed

200g mushrooms, sliced

1/2 cup white wine
-
1 cup fish stock or vegetable stock

100g green olives
-
3 tablespoon vegetable oil

Salt and Pepper

METHOD

Set a large pan over medium heat, add oil and saute the onions and red peppers for about 5 minutes

Add the pureed tomatoes and simmer for another 5 minutes

Add mushrooms, wine and fish or vegetable stock and cook uncovered for 10 minutes over a low heat.

Add olives and season with salt, black pepper and secret spice.

Dry fish with paper towels and season with salt, black pepper and secret spice.

Set a frying pan over medium heat, melt butter and sear fish on each side until nicely colored.

Serve fish over sauce in a serving dish and enjoy!
