Seared Cod with Mushrooms & Olives

INGREDIENTS

  • 4 Cod Fillets

  • 1 Onion, chopped

  • 1 red pepper, chopped

  • 4 tomatoes, peeled & pureed

  • 200g mushrooms, sliced

  • 1/2 cup white wine

  • 1 cup fish stock or vegetable stock

  • 100g green olives

  • 3 tablespoon vegetable oil

  • Salt and Pepper

  • Chef Stone's Secret Spice™️

METHOD

  1. Set a large pan over medium heat, add oil and saute the onions and red peppers for about 5 minutes

  2. Add the pureed tomatoes and simmer for another 5 minutes

  3. Add mushrooms, wine and fish or vegetable stock and cook uncovered for 10 minutes over a low heat.

  4. Add olives and season with salt, black pepper and secret spice.

  5. Dry fish with paper towels and season with salt, black pepper and secret spice.

  6. Set a frying pan over medium heat, melt butter and sear fish on each side until nicely colored.

  7. Serve fish over sauce in a serving dish and enjoy!
