Pomegranate Chilli Mint Chicken Wings

INGREDIENTS

METHOD

  • 300g chicken wings

  • 1 cup pomegranate juice

  • 1 tablespoon lemon juice

  • 2 tablespoons chilli sauce

  • 1 handful mint leaves, chopped

  • 1/2 cup white sugar

  • Oil for frying

  • 1 tablespoon butter

  • 1 tablespoon olive oil

  • Chef Stone's Secret Spice™️

  • Salt and Black Pepper to taste

  1. Cut chicken wings at joints and discard tips.

  2. season wings with salt, black pepper and secret spice and deep fry for about 10 minutes.

  3. In a pan, heat up sugar, pomegranate juice and fresh chopped mint leaves, stirring constantly till sugar is completely dissolved and the mixture reduces to about half its size to make a mint pomegranate syrup.

  4. Melt butter in olive oil, add fried wings, add the syrup, chilli sauce and lemon juice

  5. Toss till wings are evenly coated.
