Pan Seared Salmon with Cherry Tomato Salsa
INGREDIENTS

2 Wild caught Salmon Fillet

1/2 cup cherry tomatoes

2 cloves garlic, minced

1 small white onion, sliced

2 tablespoon olive oil

1 tablespoon lemon or lime juice

1 tablespoon fresh oregano, chopped

1 tsp lemon zest
-
Salt & black pepper

In a small bowl, combine half the garlic, salt, pepper, secret spice, lemon zest, lemon juice and olive oil. Rub the salmon thoroughly with the mixture on both sides.

Place a griddle pan/skillet over medium heat and sear for about 4 minutes on both sides or until salmon is cooked through.

In a small bowl, combine the garlic, lemon zest, lemon juice, olive oil, salt and pepper. Add the cherry tomatoes. Toss the mixture together.

Serve mixture over cooked salmon
