Namibian Port & Raisin Chicken

INGREDIENTS
METHOD

12 chicken drumsticks

100g streaky bacon or turkey bacon

2 large onions, sliced into rings

3 cloves of garlic, crushed

1 teaspoon thyme
-
1 cup port
-
3 cups chicken stock
-
1/2 cup raisins
-
1/2 cup vegetable oil
-
Boiled baby potatoes
-
Salt & pepper to taste

Set a deep frying pan over medium heat and brown the chicken for about 10 minutes. Remove from frying pan and set aside.

In the same frying pan, add the bacon and brown lightly.

Add garlic and onions and saute until onions soften.
-
Add port and boil for about 5 minutes. Add chicken stock, raisins and thyme.

Return chicken to frying pan and season with salt, black pepper and secret spice.

Simmer covered for 20 minutes.

Add boil potatoes and serve!
