Mozambican Spicy Calamari

INGREDIENTS

METHOD

  • 500g Calamari rings

  • 3 Tablespoon crushed garlic

  • 3 Tablespoon Butter

  • 1 teaspoon fresh ginger, finely chopped

  • 1 teaspoon green chilli, finely chopped

  • Lemon Zest from 1 lemon

  • Salt & black pepper

  • Chef Stone's Secret Spice™️

Sauce

  • 1 Onion, chopped

  • 1 tablespoon brown sugar

  • 2 tablespoon soy sauce

  • 1 cup lemon juice

  • 1 cup white whine

  1. Set a frying pan over medium heat and heat the butter in the pan

  2. Fry the calamari for 2 minutes then add garlic, ginger, chilli and lemon zest. Fry for a further 2 minutes

  3. Mix together sauce ingredients and pour into the pan with the calamari. Allow to cook for 3 minutes

  4. Remove the calamari and continue cooking the sauce until it has reduced to at least half its volume

  5. Serve the calamari and pour sauce over it.
