Mozambican Spicy Calamari
INGREDIENTS

500g Calamari rings
-
3 Tablespoon crushed garlic
-
3 Tablespoon Butter
-
1 teaspoon fresh ginger, finely chopped

1 teaspoon green chilli, finely chopped
-
Lemon Zest from 1 lemon
-
Salt & black pepper
-
Chef Stone's Secret Spice™️
Sauce
-
1 Onion, chopped
-
1 tablespoon brown sugar
-
2 tablespoon soy sauce
-
1 cup lemon juice
-
1 cup white whine
-
Set a frying pan over medium heat and heat the butter in the pan

Fry the calamari for 2 minutes then add garlic, ginger, chilli and lemon zest. Fry for a further 2 minutes

Mix together sauce ingredients and pour into the pan with the calamari. Allow to cook for 3 minutes

Remove the calamari and continue cooking the sauce until it has reduced to at least half its volume
-
Serve the calamari and pour sauce over it.
