Honey Lime Chicken Salad

INGREDIENTS

2 Large chicken breasts
-
1/4 cup of honey
-
1/4 cup of olive oil
-
1/4 cup of lime juice
-
2 cloves of garlic, minced
-
Salt & black pepper
-
Chef Stone's Secret Spice™️

Mixed leaf salad
-
4 Cherry tomatoes, quartered
-
2 large plums , cut
METHOD

Cover your chicken breasts with cling film and beat with a meat tenderizer until chicken is about 1inch thick.

In a small bowl, combine olive oil, honey, lime juice, garlic, salt and black pepper.

Divide the mixture into 2 halves, marinate your chicken in one half and save the other half.

Set up a grill or griddle pan and grill chicken on both sides until chicken is cooked through.

Combine mixed leaf salad, cherry tomatoes and plums in a serving dish and top with chicken.

Drizzle with other half of dressing.
