Homemade Sloppy Joes

INGREDIENTS
Sloppy Joes

200g extra lean minced meat

1/2 brown onion, diced

2 cloves garlic, minced

1 green bell pepper, diced
-
2 cup water
-
1/2 cup ketchup
-
1/2 teaspoon cayenne pepper

1/2 teaspoon paprika
-
1 dash Worcestershire sauce

2 tablespoons brown sugar
-
1 teaspoon Dijon mustard

Salt and black pepper to taste

Grilled Plantain and Prawns

Plantains, cut into desired shapes

Prawns

METHOD

Place a hard bottomed skillet on medium heat and sweat the onions, add the minced meat and stir till meat changes colour. Add salt, black pepper, secret spice, cayenne pepper and paprika

Add in garlic and green bell peppers; cook for about 5 minutes or until softened. Add 1 cup water and stir, scraping the pan to dissolve any brown flavor bits from the bottom of the skillet.

Mix in ketchup, brown sugar, Worcestershire sauce, Dijon mustard, salt, black pepper and secret spice.

Add 1 more cup water. Reduce heat to low and simmer, stirring occasionally, until the liquid has evaporated and the mixture is thick, about 45 minutes.

Season plantain and prawns and grill on a coal grill

Serve with sloppy joes and enjoy
