Dark Side Series Chicken Burgers

INGREDIENTS

​For the Burger Buns

  • 250g bread flour

  • 1 teaspoon dry yeast

  • 1/2 cup (125 ml) of warm water

  • 11/2 tablespoons of sugar

  • 1/2 teaspoon Salt

  • 1 teaspoon medicinal charcoal (2.5 grams) or 1 tablespoon black food colouring

 

For the burger filling​
 

  • 2 large chicken breasts

  • 1 cup all-purpose flour

  • 1/2 cup corn flour

  • 1 teaspoon baking powder

  • Fresh lettuce leaves

  • Tomatoes , sliced

  • Mayonnaise

  • Mozarella cheese slices

  • Caramelized onions

METHOD

  1. Put the flour into a bowl and add the salt.

  2. Mix the warm water, sugar and yeast.

  3. Add the liquid to the flour and let allow it seat for about 15 minutes.

  4. Dissolve the charcoal in a tablespoon of water  If you use charcoal tablets, smash in a mortar before dissolving

  5. Add the charcoal slurry to the flour in the bowl and mix everything.

  6. Knead the dough for about five minutes.

  7. Cover the bowl and let the dough rest in a warm spot until it doubles in size (About 1hr)

  8. When the dough has doubled in size, knead it again. 

  9. Divide it in four parts. 

  10. Shape them into buns and place those on a baking sheet, covered with parchment paper.
    Cover them with a clean tea towel and let the buns rest for about 45 minutes.

  11. Bake the buns in the preheated oven:

  12. 375° F / 190°C for 15 to 20 minutes

  13. To make the chicken filling, flatten chicken to 1 inch thickness and season with salt, black pepper and secret spice.

  14. Mix together flour, corn flour and baking powder. Add water  until you get a runny paste that coats the back of a spoon

  15. Dip chicken in flour mixture and deep fry.

  16. Layer Burger and enjoy!
