COOKIE CRUSTED SQUASH

INGREDIENTS

1 small/medium squash

extra virgin olive oil
-
1/4 cup cookie crumbs
-
2 teaspoons chopped fresh mint leaves
-
Salt & freshly ground pepper

Strawberries to garnish

Preheat the oven to 190 degrees celcius

Slice the squash in half, then slice into quarters. drizzle a decent amount of olive oil into a foiled oven tray.

Brush the squash quarters with olive oil and season with salt and pepper. sprinkle the cookies onto each of the squash pieces, follow with chopped mint.

Bake for 45 minutes, until the squash is tender, and the tops and sides are golden brown.

Serve the squash warm topped with mint leaves and strawberries.
