West African Chicken Skewers
with Peanut Sauce

INGREDIENTS

4 Chicken breasts
-
6 Bamboo skewers, soaked in water
-
2 tablespoon vegetable oil
-
1 Onion, chopped
-
2 cloves of Garlic, chopped
-
1/4 cup peanut nutter
-
1/2 cup chicken stock
-
1/4 teaspoon cayenne pepper
-
Salt & black pepper
-

METHOD
-
Preheat your grill or set a griddle pan over medium heat

Cut chicken breast into cubes and season with salt, black pepper and secret spice
-
Thread unto skewer sticks
-
In a saucepan over medium heat, heat the oil and saute onions and garlic until soft and fragrant
-
Add the peanut butter, chicken sauce and cayenne pepper. Stir continuously until peanut butter melts.

Pour the sauce over skewered chicken and place on the grill. Baste regularly as they cook.
