Dark Side of a Caprese Salad

INGREDIENTS

3 ripe vine tomatoes

3 large roma tomatoes

2 mozarella balls
-
1 bunch fresh basil leaves

Salt and black pepper to taste

For the Pesto
-
3 tablespoon extra-virgin olive oil.

4 garlic cloves.
-
3 handful packed basil leaves
-
1 cup finely grated Parmesan cheese
-
½ cup pine nuts, lightly toasted.

Kosher salt and black pepper to taste.

METHOD

Layer alternating slices of tomatoes and mozzarella, adding a basil leaf between each, on a large, shallow platter. .

Combine all the pesto ingredients in a blender and pulse until fully combined
