Dark Side of a Caprese Salad

INGREDIENTS

  • 3 ripe vine tomatoes

  • 3 large roma tomatoes

  • 2 mozarella balls

  • 1 bunch fresh basil leaves

  • Salt and black pepper to taste

  • Chef Stone's Secret Spice™️

​For the Pesto

  • 3 tablespoon extra-virgin olive oil.

  • 4 garlic cloves.

  • 3 handful packed basil leaves 

  • 1 cup finely grated Parmesan cheese 

  • ½ cup pine nuts, lightly toasted.

  • Kosher salt and black pepper to taste.

  • Chef Stone's Secret Spice™️

METHOD

  1. Layer alternating slices of tomatoes and mozzarella, adding a basil leaf between each, on a large, shallow platter. .

  2. Combine all the pesto ingredients in a blender and pulse until fully combined

  3. Drizzle pesto over salad
