300g chicken wings

2 cups cornflour
-
Salt & black pepper

Chef Stone's Secret Spice™️

30g of butter

Oil for Frying

1/2 cup of Bourbon
-
1 1/2 tablespoons olive oil
-
1/4 cup diced onion
-
3 cloves garlic, minced
-
5 tablespoons ketchup
-
3 tablespoons honey
-
3 tablespoons brown sugar
-
2 tablespoons apple cider vinegar
-
1 tablespoon Worcestershire sauce

Wash wings and cut at joints, discard or save tips for stock.

Season with salt, black pepper and secret spice

Drench in corn flour and deep fry. The cornflour will make the chicken nice and crispy

Heat olive oil in a skillet over medium heat. Saute onion and garlic until tender. Stir in ketchup, honey, brown sugar, apple cider vinegar, Worcestershire sauce, Bourbon, salt, and pepper. Cook for a few minutes to thicken sauce. Remove from heat, and allow to cool.

Put a fresh skillet over medium heat, add olive oil, butter, chicken wings and the bbq sauce. Toss till nicely coated.
